Recreating Authentic Chutneys through Mixer Grinders

There was a time when authentic chutneys were painstakingly prepared with stone grinders. White Coconut Chutney Recipe:-

This Chutney is A must-have with Idlis & Dosas:-

 

Key Ingredients Needed:-

  1. Coconut grated- 1 cup
  2. Green Chillies- 1 or 2
  3. Roasted Channa-dal 2 tbsp
  4. Lemon juice – 1 tsp
  5. Salt – as per taste
  6. Ginger- very little

To Temper the Chutney:-

  1. Whole red chilly- 1
  2. Mustard seeds- half tsp
  3. Urad dal- half tsp
  4. Curry leaves- few
  5. Oil – very little.

Process:-

  1. Gather all the ingredients to make white chutney. Add a few drops of lemon juice.
  2. Put all the ingredients in a blender along with very little water
  3. Run the mixer grinder to a lower speed. Add a little bit of water if necessary.
  4. The chutney should be well blended but still retain a mild grainy texture to give the authentic taste. Take care not to make the chutney too runny.
  5. For tempering, add the oil to the pan. When it is hot, add the urad dal and fry it till it turns mild golden. Add mustard seeds. As it splutters, add the torn bits of the dries red chillies and curry leaves. Turn off heat. Pour this tempering over the chutney. For authentic taste, use coconut oil for the tempering.

Red Chutney Recipe:-

Red chutney is normally used as a spread over dosas. This chutney does not involve the usage of coconuts and does not need tempering.

Key Ingredients Needed:-

  1. Roasted Channa dal- 2 tbsp
  2. Garlic cloves- 3 to 4
  3. Onion chopped- half cup
  4. Tamarind- a pinch
  5. Dry Red Chillies (pre soaked in water)-3
  6. Salt – as per taste

Process:-

Take all the ingredients together and blend well in a mixer-grinder. This chutney is not to be made runny. Hence, water is to be added only as per requirement.

Green Coconut Chutney Recipe:-

Green chutney is another very popular chutney that is normally served with idlis and dosas

Key Ingredients Needed:

  1. Coconut grated- 1 cup
  2. Chopped coriander leaves- 1 cup
  3. Green Chillies- 2 to 3
  4. Roasted Channa-dal 2 tbsp
  5. Lemon juice – 3 tsp
  6. Salt – as per taste
  7. Ginger- very little

To Temper the Chutney:-

  1. Mustard seeds- half tsp
  2. Urad dal- half tsp
  3. Curry leaves- few
  4. Asafoetida – a pinch
  5. Oil – very little.

Process:-

  1. Gather all the ingredients to make white chutney. Add a drops of lemon juice.
  2. Put all the ingredients in a blender along with very little water
  3. Run the mixer grinder to a lower speed. Add a little bit of water if necessary.
  4. The chutney should be well blended but have mild grainy texture to give the authentic taste. Take care not to make the chutney too runny.
  5. For tempering, add the oil to the pan. When it is hot, add the urad dal and fry it till it turns mild golden. Add mustard seeds. As it splutters, add the asafoetida. When the aroma arises, add curry leaves. Turn off heat. Pour this tempering over the chutney.

If you wish to, you may substitute half cup of coriander leaves with half cup mint leaves as well. In case you do not wish to, you may omit adding asafoetida.
